Warm & Hearty Beef Cabbage Soup

This soup reminds me of the holidays! Beef Cabbage Soup – Perfect!

My extended family would get together every holiday for ‘Cookie Day’ where we would bake some of my grandmother’s favorite Norwegian Christmas cookies. Dozens of Krum Kaka and Berlinerkranser later, we had hungry mouths to feed and this soup really hit the spot.

While it was always a loud and chaotic event, my aunt’s mother, Helen, always brought a big pot of Beef Cabbage Soup. So delcious. We ate our fill with warm crusty bread and plenty of laughs.

As we said our goodbyes and packed up the cookie treasures for everyone to take home (at least those that weren’t already eaten), everyone always got a ‘to-go’ package that included this wonderful soup.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 clove of garlic, minced
  • 3 celery stacks, sliced
  • 3 carrots, sliced
  • 1/2 head of cabbage, chopped
  • 1 can of crushed tomatoes (28 ounces)
  • 1 cup water
  • 1 box of organic beef stock (32 ounces)
  • 2 tablespoons parsley
  • salt & pepper to taste

Instructions

  • In a Dutch oven, brown the ground beef over medium heat.
  • Add the onion and garlic and cook until the onion is soft. Be sure not to burn the garlic.
  • Add the remaining ingredients and simmer for 2 hours or until ready to serve.

Notes

This super easy recipe relies on simple, fresh ingredients and minimal seasonings. If you prefer, you can add 1 teaspoon of thyme or rosemary. You could also add 1/2 teaspoon of cayenne pepper to add a little zip.
The soup can last in your freezer for up to two months.
