- 1 pound ground beef
- 1 medium onion, chopped
- 1 clove of garlic, minced
- 3 celery stacks, sliced
- 3 carrots, sliced
- 1/2 head of cabbage, chopped
- 1 can of crushed tomatoes (28 ounces)
- 1 cup water
- 1 box of organic beef stock (32 ounces)
- 2 tablespoons parsley
- salt & pepper to taste
In a Dutch oven, brown the ground beef over medium heat.
Add the onion and garlic and cook until the onion is soft. Be sure not to burn the garlic.
Add the remaining ingredients and simmer for 2 hours or until ready to serve.
This super easy recipe relies on simple, fresh ingredients and minimal seasonings. If you prefer, you can add 1 teaspoon of thyme or rosemary. You could also add 1/2 teaspoon of cayenne pepper to add a little zip.
The soup can last in your freezer for up to two months.
